We took the kids to a friend's cottage this week. I always love spending time by the water, helping my kids catch frogs like this one:
Once we had put him back in the lake (and I washed my hands!) I set about making a hard iced tea for the grown-ups. I also made a batch without the vodka to put in the fridge for the kids to grab. Give it a try and let me know what you think!
4 cups boiling water
2 Tbsp Sweet Cheat Spoonable Monk Fruit
2 orange pekoe tea bags
4 fl oz vodka
Fresh lemon juice to taste plus extra lemon wedges for serving
Refreshing mint, tangy lime, and ice cold rum. Mojitos were made for hot summer weekends.
Ingredients: Serves 1
1 teaspoon Sweet Cheat Spoonable Monk Fruit
10 mint leaves
4 lime wedges
1.5 oz rum
3 - 4 ice cubes
club soda or sparkling water
Place a lime wedge and all the mint leaves in a glass. Use a muddler or spoon to crush the leaves and release some of the lime's juice.
Add another two lime wedges and muddle again.
Add Sweet Cheat Spoonable Monk Fruit, ice cubes, and gin and stir to mix. Top up with club soda or sparkling water and garnish with the remaining lime. Sit back, relax and enjoy summer!
You can always "let them eat cake" with this mug cake recipe. This cake has an amazing texture, 6 grams of protein and only 1 gram of sugar. It's a treat I feel good about giving my kids for dessert and it's so quick to make that once everyone is in bed I can whip one up for myself for a moment of red velvet decadence!
You will need a microwave-safe mug and the following ingredients:
1 Tbsp Sweet Cheat Chocolate Milk mix
2 Tbsp ground almonds
1/4 tsp baking powder
1 tsp water
1 tsp butter, melted
1/2 tsp vanilla
1 egg yolk
1 drop red food colouring
1 Tbsp cream cheese
1/2 tsp Sweet Cheat Spoonable Monk Fruit
Start by assembling all your ingredients:
Now, I like to show every step and make more dishes dirty than I have to for some reason that my husband can't understand. But in reality, you can go ahead and melt the butter in the mug and then whisk in all the other ingredients until smooth and microwave on high for 40 - 50 seconds. Top with the cream cheese icing or some Sweet Cheat Vanilla Whipped Cream, maybe some strawberries, and eat. Easy peasy.
But if you're like me and you find it oddly therapeutic to take twice as long as necessary, start by mixing together the dry ingredients in a bowl.
In another bowl, melt the butter in the microwave and then whisk in the egg yolk, vanilla, and food colouring.
Add the wet ingredients to the dry and mix together until smooth.
Scrape the batter into the mug and microwave on high for 40 - 50 seconds.
To make the icing, mix together the cream cheese and Sweet Cheat Spoonable Monk Fruit and spread on top of the mug cake. Tip: to make the cream cheese and Monk Fruit easier to mix, either bring the cream cheese to room temperature or warm it slightly in the microwave.
Serves 1 (until the rest of the family comes running at which point you'll have to start a mug cake assembly line!).
Easter is a time for sweet treats so trying to cut down on sugar at this time of year can feel especially difficult. Swapping out some high-sugar treats for some sugar-free ones can help to keep you on track, and keep you motivated.
This recipe is creamy, sweet, and easy to make. The pastel colour is reminiscent of the sugar laden treats in the stores, but feel free to leave it out if you prefer.
You will need a bowl and the following ingredients:
1 Tbsp Sweet Cheat Spoonable Monk Fruit
½ cup cream cheese
2 Tbsp powdered peanut butter
½ tsp vanilla paste
1 Tbsp unsalted butter
1-2 drops blue food colour
Mix all ingredients together and spoon the mixture into a zip-top bag, or a piping bag if you have one. Snip the corner off of the plastic baggie (if using) and pipe the mixture out into egg shapes, or into bunny shapes if you're feeling up for a challenge!
Tip: This also makes a great dip for apples.
I'm not sure what the weather is like where you are, but today in Waterloo the sky outside reminds me of a foggy day in London, England. This week we've had icy temperatures followed by drippy thaws and every kind of precipitation imaginable; snow, rain, sleet, and possibly a few cats and dogs. As I look outside this afternoon and see the fog hanging around the tips of the trees, my mind drifts off to my plans for this evening: a warm blanket around me, my feet up on the couch, and my hands wrapped around a hot drink, like this sweet London Fog. Can't wait for that hit of sweet tea, frothed milk, and warm vanilla...
How to make it:
3/4 cup milk
1/4 cup boiling water
1 tsp Sweet Cheat Spoonable Monk Fruit
1/2 tsp vanilla
1 Earl Grey tea bag
Place the tea bag in your favourite mug and add the hot water.
While it's steeping, warm your milk over medium heat. Add the vanilla and Sweet Cheat Spoonable Monk Fruit to the milk. If you've got a milk frother, frothing the milk is a nice touch.
Top the tea with your sweet, frothy, vanilla milk and enjoy!
Crunchy apples, chewy oats, warm cinnamon, and no added sugar; this quick and easy recipe is exactly what's called for when you want to warm up with a sweet treat.
1 cup oats
3 tbsp Sweet Cheat Spoonable Monk Fruit
2 tsp cinnamon
1/4 cup plus 1 tsp all-purpose flour
1/4 cup butter
pinch of salt
Preheat oven to 350ºF.
Assemble all your ingredients and peel and cut up apples into bite-sized pieces.
Mix the apples with 1 tbsp of the Spoonable Monk Fruit, 1 tsp of the cinnamon, 1 tsp of the all-purpose flour, a pinch of salt, and 2 tbsp of water. Spread the apples evenly across the bottom of an 8x8 inch pan.
For the topping, mix together the oats, remaining 2 tbsp of Spoonable Monk Fruit, remaining 1 tsp of cinnamon, and the remaining 1/4 cup of all-purpose flour. Cut the butter into small pieces and add to the oat mixture, then use your fingers to rub the butter into the oat mixture to distribute it evenly.
Spread the oats evenly across the apples, place the dish in the preheated oven for 45 minutes until golden. Serve warm.
It's that most wonderful time of the year! I don't know about you, but my house is overflowing with kids and extended family and holiday baking. Being a teacher, every day at school is filled with sweet treats in the staff room and my amazing students bringing me little holiday goodies. And I love it all! But it's a tough time of year when you're trying to keep sugar under control and you still want to indulge in some holiday fun and cheer.
Don't worry, I've got you covered with my luxurious salted caramel mocha. It looks and tastes incredible and goes really well next to a roaring fire with your favourite holiday movie on the TV. Avoid the sugar rush and whip up this sweet cheat for you and your loved ones.
Ingredients for each mocha:
2 tablespoons Sweet Cheat Hot Chocolate Mix
3/4 cup strong brewed coffee
1/4 cup steamed or frothed milk
1 drop caramel extract
1/2 cup whipping cream whipped with 1/2 teaspoon of Sweet Cheat Spoonable Monk Fruit (or to taste)*
Sea Salt for sprinkling
*this will make enough whipped cream for several mochas!
Place 2 tablespoons of Sweet Cheat Hot Chocolate in a mug
Add 3/4 cup strong coffee and use a whisk or fork to blend the Hot Chocolate mix and coffee together.
Add 1/4 cup of steamed milk, one drop of caramel extract, and mix. Top mocha with a dollop of whipped cream sweetened with Sweet Cheat Spoonable Monk Fruit to taste, and sprinkle with sea salt.
Enjoy... and try not to be like me and drink it all standing up! This one is definitely best enjoyed on the couch, with your feet up, watching the snow fall outside. Happy holidays everyone!
In honour of the first day of fall, a classic guilty pleasure is given a healthy makeover. Ladies and gentlemen, I give you Tiny Toad’s Sweet Cheat Pumpkin Spice Latte recipe. A grande pumpkin spice latte at the coffee shop everyone associates it with (you know the one) will run you 50g of sugar. That’s double the daily recommended limit!
This version has no added sugar and when made with unsweetened almond milk, it has 0g net carbs. I use a Snickerdoodle flavoured coffee which is amazing with almond milk.
Simply add pumpkin puree, vanilla, pumpkin pie spice, and Sweet Cheat Spoonable Monk Fruit to strong coffee. Steam the milk, pour over coffee, and enjoy!
Sweet Cheat Pumpkin Spice Latte
Whisk first 5 ingredients together.
Froth milk (or whisk vigorously)
Pour over coffee.
Just in time for the last heat wave of summer. A sugar free, low carb iced coffee recipe. The ice coffees you find in drive throughs can contain 22g of added sugar. That is nearly the recommended added sugar limit of 25g.
This recipe will give you no added sugar and tastes just as delicious. You can use any milk you like. For a low carb or vegan option use a nut or coconut milk. I use a Snickerdoodle flavoured coffee, so nutty almond milk pairs deliciously.
This recipe can’t be simpler. Just add all ingredients together and mix well. If slush is your thing, blend with ice.

This summer has been absolutely bananas for heat. I am usually a steadfast pool-only-swimmer. If we’re at one of the great lakes, I’ll take a swim in those sand-bottom-no-seaweed waters. But usually, if I can’t see the bottom, I don’t like to get in. This past heat wave was so crazy at the cottage that even I jumped off the dock (praying my feet didn’t touch weeds of course).
This recipe is one to help beat the heat. The slushy goodness can be made both with or without rum. If you blend up a pitcher, make it without, then add the rum to the adult glasses so the tiny toads can cool off with a virgin version.
Just blend ingredients with ice, top up with a splash of bubbly water, and enjoy!
